Chicken Soup: Benefits, Side Effects, Recipe & How Much to Eat

Chicken soup is a comforting, nutritious dish loved worldwide for its soothing properties and health benefits. Whether you’re fighting a cold or looking for a hearty meal, this classic soup offers a blend of flavors and wellness perks that make it a staple in many households.

Ingredients

  • 1 whole chicken (about 3-4 pounds), cut into pieces
  • 10 cups water
  • 2 large carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme or 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 cup egg noodles or rice (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken pieces in a large stockpot and cover with 10 cups of water. Bring to a boil over medium-high heat, skimming off any foam that forms on the surface.
  2. Add the chopped onion, carrots, celery, garlic, salt, pepper, thyme, and bay leaves to the pot. Reduce the heat to low and let simmer uncovered for 1.5 to 2 hours, until the chicken is cooked through and the broth is flavorful.
  3. Remove the chicken from the pot and set aside to cool slightly. Discard the bay leaves. Strain the broth if desired for a clearer soup, or leave the vegetables for a hearty texture.
  4. While the broth is hot, shred the chicken into bite-sized pieces, discarding the skin and bones. Return the shredded chicken to the pot.
  5. If adding noodles or rice, bring the soup back to a gentle boil and cook for an additional 8-10 minutes until tender.
  6. Taste and adjust seasoning with more salt or pepper if needed. Garnish with chopped parsley before serving.

Tips

  • Substitutions: Use boneless, skinless chicken breasts or thighs for quicker cooking, but note that the flavor may differ slightly. For a vegetarian version, substitute with vegetable broth and add tofu or extra vegetables.
  • Storage: Store leftovers in airtight containers in the refrigerator for up to 3 days. For longer storage, freeze in portions for up to 3 months.
  • Common mistakes: Avoid boiling the chicken vigorously as it can make the broth cloudy and toughen the meat. Simmer gently for a clear, flavorful broth.
  • Enhancements: Add a squeeze of lemon juice or a dash of hot sauce for extra flavor. Fresh herbs like dill or parsley can also brighten the soup.

Serving Suggestions

Serve hot with crusty bread or a side salad for a complete meal. This chicken soup pairs wonderfully with a slice of toasted baguette or some whole-grain crackers. For a more filling option, top with shredded cheese or a dollop of sour cream.
