Cream Cheese: 15 Benefits, Uses & How to Make It at Home

Cream cheese is a versatile dairy product loved worldwide for its rich, creamy texture and mild flavor. Whether used in spreads, desserts, or cooking, understanding its benefits and how to make it at home can elevate your culinary skills and enhance your diet.

Ingredients

  • 4 cups (1 quart) whole milk
  • 1 cup heavy cream
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice or white vinegar

Instructions

  1. Combine the Milk and Cream: In a large saucepan, pour the whole milk and heavy cream. Heat over medium heat, stirring occasionally, until the mixture reaches about 185°F (85°C). Do not boil.
  2. Add Acid for Curds: Remove the saucepan from heat. Stir in the lemon juice or vinegar gradually. You should see curds forming within a minute or so.
  3. Let it Rest: Cover the saucepan and let it sit undisturbed for 10-15 minutes to allow curds to fully separate from the whey.
  4. Drain the Curds: Line a fine-mesh strainer with cheesecloth or a clean kitchen towel. Pour the mixture through to separate the curds from the whey. Let it drain for 10-15 minutes.
  5. Blend for Creaminess: Transfer the drained curds to a food processor or blender. Add the salt and blend until smooth and creamy, about 2-3 minutes.
  6. Adjust and Store: Taste and adjust salt if needed. Transfer the cream cheese to an airtight container and refrigerate for up to one week.

Tips

  • Substitutions: You can substitute lemon juice with white vinegar or apple cider vinegar for a different flavor profile.
  • Storage: Store homemade cream cheese in an airtight container in the refrigerator. For best freshness, consume within 7 days.
  • Texture adjustments: For a thicker cream cheese, drain longer or add a little cream cheese or sour cream during blending.
  • Avoid overheating: Keep the milk at the right temperature to prevent scorching and ensure proper curd formation.

Serving Suggestions

Homemade cream cheese is perfect as a spread on bagels, toast, or crackers. It can also be used as a base ingredient in cheesecakes, creamy dips, or stuffed pastries, adding a fresh, homemade touch to your dishes.
