Rice Milk: Benefits, Nutrition, How to Make It & Uses

Rice milk is a smooth, naturally sweet plant-based alternative to dairy milk, making it a popular choice for vegans, those with lactose intolerance, or anyone seeking a dairy-free option. Homemade rice milk is easy to prepare and allows you to control ingredients, ensuring a fresh, wholesome beverage every time.

Ingredients

  • 1 cup white rice (preferably jasmine or long-grain)
  • 4 cups filtered water (for blending)
  • 2 cups additional filtered water (for cooking rice)
  • Optional: 1-2 tablespoons sweetener (maple syrup, agave syrup, or honey)
  • Optional: 1 teaspoon vanilla extract for flavor
  • Pinch of salt

Instructions

  1. Rinse the rice thoroughly under cold running water until the water runs clear to remove excess starch and debris.
  2. In a saucepan, combine the rinsed rice with 2 cups of filtered water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is soft and cooked through. Stir occasionally to prevent sticking.
  4. Remove the cooked rice from heat and let it cool slightly for about 10 minutes. This step helps prevent hot splashes during blending.
  5. Transfer the cooked rice to a blender. Add 4 cups of filtered water, optional sweetener, vanilla extract, and a pinch of salt.
  6. Blend on high speed for 1-2 minutes until the mixture is smooth and creamy. If the mixture is too thick for your liking, add a little more water and blend again.
  7. Pour the blended rice milk through a nut milk bag, fine mesh strainer, or cheesecloth into a large bowl or pitcher. Squeeze or press to extract as much liquid as possible.
  8. Transfer the strained rice milk into a clean bottle or jar. Store in the refrigerator for up to 4-5 days, shaking well before each use.

Tips

  • Substitutions: You can swap white rice for brown rice for a nuttier flavor, but it will require a longer cooking time and may result in a slightly thicker milk.
  • Storage: Keep homemade rice milk refrigerated in an airtight container and consume within 4-5 days for freshness and safety. Shake well before using as separation may occur.
  • Common mistakes: Not rinsing the rice thoroughly can lead to cloudy milk. Over-blending can make the milk slimy; blend just until smooth.
  • Sweeteners and flavors: Adjust sweetness to taste, and consider adding a pinch of cinnamon or a splash of vanilla for extra flavor.

Serving Suggestions

Rice milk is versatile and can be enjoyed on its own, poured over cereal, added to smoothies, or used in baking recipes. Its naturally sweet flavor makes it a perfect dairy alternative in coffee, tea, or hot chocolate.

Variations

For a richer or more flavorful rice milk, experiment with adding a handful of toasted rice or a splash of coconut milk during blending. You can also infuse the milk with cinnamon sticks or vanilla beans for a more aromatic beverage. Making your own rice milk allows you to customize sweetness and flavor, ensuring it suits your dietary preferences and taste buds.
