Tart Cherry Juice: 20 Benefits, Side Effects, Nutrition & How to Make It

Discover the vibrant world of tart cherry juice—an antioxidant-rich beverage celebrated for its health benefits and delicious flavor. Making it at home allows you to enjoy a pure, fresh product free from added sugars and preservatives.

Ingredients

  • 2 pounds fresh tart cherries (such as Montmorency or sour cherries)
  • 4 cups filtered water
  • 1-2 tablespoons honey or maple syrup (optional, for sweetness)
  • 1 tablespoon lemon juice (optional, for preservation and flavor)

Instructions

  1. Wash the cherries thoroughly under cold running water to remove dirt and residues.
  2. Remove stems and pits from the cherries. You can do this by gently squeezing or using a cherry pitter if available.
  3. Place the pitted cherries into a large pot along with 4 cups of filtered water.
  4. Bring the mixture to a gentle boil over medium heat, then reduce to low and simmer for about 20-25 minutes. This process extracts the juice and flavors from the cherries.
  5. Once the cherries have softened and released their juice, remove the pot from heat.
  6. Use a fine-mesh strainer or cheesecloth to strain the mixture into a large bowl or pitcher. Press gently to extract as much juice as possible.
  7. If desired, stir in honey or maple syrup and lemon juice to enhance flavor and preserve the juice. Mix well until fully incorporated.
  8. Transfer the strained tart cherry juice into sterilized bottles or jars. Allow it to cool to room temperature.
  9. Store the juice in the refrigerator for up to 5-7 days, or freeze in ice cube trays for longer storage.

Tips

  • Substitutions: If fresh cherries are unavailable, frozen tart cherries can be used; just thaw before cooking.
  • Sweetening: Adjust the amount of honey or maple syrup based on your taste preference and the sweetness of the cherries.
  • Storage: For longer shelf life, consider pasteurizing the juice by heating it to 160°F (71°C) for a few minutes before bottling.
  • Common Mistakes: Avoid boiling the juice too vigorously, as this can affect flavor and nutritional quality. Keep the simmer gentle.

Serving Suggestions

Enjoy tart cherry juice chilled on its own as a refreshing beverage or mix it with sparkling water for a fizzy drink. It also pairs well with smoothies, yogurt, or as a natural flavor enhancer in sauces and marinades. Incorporate it into your daily routine to potentially benefit from its numerous health properties.
