Walnut Butter: Benefits, Nutrition, Side Effects & How to Make It

Walnut butter is a creamy, nutritious spread made from ground walnuts, offering a rich flavor and numerous health benefits. It’s a versatile alternative to traditional nut butters and perfect for adding depth to your breakfasts and snacks.

Ingredients

  • 2 cups shelled walnuts (raw or toasted)
  • 1-2 tablespoons neutral oil (such as walnut or coconut oil, optional)
  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • Pinch of salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Spread the walnuts evenly on a baking sheet and toast for 8-10 minutes, stirring halfway through, until fragrant and lightly golden. Allow to cool slightly.
  2. Transfer the cooled walnuts to a food processor. Pulse a few times to break them down, then process continuously for about 5-8 minutes. Initially, the walnuts will become crumbly, then gradually turn into a smooth, creamy butter.
  3. Stop the processor periodically to scrape down the sides of the bowl with a spatula to ensure even blending. If the mixture is too thick or isn’t blending smoothly, add 1 tablespoon of neutral oil and continue processing until desired consistency is reached.
  4. Once the walnut butter is smooth and creamy, add honey or maple syrup and a pinch of salt if desired. Pulse a few more times to incorporate. Taste and adjust sweetness or salt as needed.
  5. Transfer the finished walnut butter to an airtight jar or container. Store in the refrigerator for up to 2-3 weeks, stirring before each use to maintain consistency.

Tips

  • Substitutions: You can substitute raw walnuts with toasted walnuts for a more roasted flavor. For a sweeter version, add a bit more honey or maple syrup.
  • Storage: Keep your walnut butter in an airtight container in the refrigerator. For longer shelf life, consider storing in small jars or portions to prevent contamination.
  • Common mistakes: Overprocessing can cause the oils to separate, making the butter greasy. To avoid this, process in short bursts and add oil gradually if needed.
  • Variations: Enhance flavor by adding cinnamon, vanilla extract, or a splash of bourbon for a unique twist.

Serving Suggestions

Enjoy walnut butter spread on toast, drizzled over oatmeal or yogurt, or used as a dip for fruits and vegetables. It also makes a delicious addition to smoothies or as a filling for baked goods.
